Ingredients:
- 2 cups mixed vegetables (such as bell peppers, carrots, peas, cauliflower, beans), chopped
- 1 onion, thinly sliced
- 2 tomatoes, chopped
- 1 green chili, finely chopped (adjust according to your spice preference)
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves, for garnishing
Instructions:
1. Heat oil in a pan or kadai over medium heat. Add cumin seeds and let them splutter.
2. Add sliced onions and sauté until they turn golden brown.
3. Add ginger-garlic paste and green chili. Cook for a minute until the raw smell disappears.
4. Add chopped tomatoes and cook until they become soft and mushy.
5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a couple of minutes.
6. Add the mixed vegetables to the pan and stir-fry for 2-3 minutes.
7. Reduce the heat to low, cover the pan, and let the vegetables cook for 8-10 minutes or until they are tender, stirring occasionally.
8. Remove the lid and cook for a few more minutes to evaporate any excess moisture.
9. Sprinkle garam masala powder and mix well.
10. Garnish with fresh coriander leaves.
11. Serve hot with rice, roti, or naan.
