Fried Bhature

Bhatura is a type of Indian bread that is popularly served with chole (spiced chickpea curry). It's known for its fluffy texture and is typically deep-fried until it puffs up. Here's a basic recipe to make bhatura at home:

Ingredients:

- 2 cups all-purpose flour (maida)

- 1/2 cup yogurt (dahi), preferably at room temperature

- 1/2 teaspoon baking powder

- 1/4 teaspoon baking soda

- 1/2 teaspoon sugar

- 1/2 teaspoon salt

- Water, as needed

- Oil, for deep frying

Instructions:

1. **Prepare the Dough:**

- In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, sugar, and salt.

- Add the yogurt and mix well to incorporate it into the flour mixture.

- Gradually add water, a little at a time, and knead to form a smooth and soft dough. The dough should be slightly sticky but manageable. Cover the dough with a damp cloth and let it rest for about 2 hours at room temperature. This resting period allows the dough to ferment slightly and develop flavor.

2. **Shape the Bhaturas:**

- After the resting period, knead the dough again briefly to make it smooth.

- Divide the dough into small lemon-sized balls. Roll each ball between your palms to make them smooth.

- Take each ball and flatten it slightly with your hands. Using a rolling pin, roll out each ball into an oval or round shape, about 6-7 inches in diameter and 1/4 inch thick. The thickness can vary based on preference.

3. **Fry the Bhaturas:**

- Heat oil in a deep frying pan or kadhai over medium-high heat. The oil should be hot but not smoking.

- Carefully slide one rolled-out bhatura into the hot oil. It should immediately start to puff up.

- Gently press down with a slotted spoon or ladle to help it puff evenly. Fry for about 30-40 seconds on one side until golden brown and then flip it over using the slotted spoon.

- Fry the other side until golden brown as well. Remove the bhatura using the slotted spoon and drain excess oil by placing it on paper towels.

4. **Serve:**

- Serve hot bhaturas with chole (spiced chickpea curry), pickle, or yogurt.
